Gluten Free Sundried Tomato Basil Pesto Pasta with Chicken
I just recently received a new toy from my wonderful fiancee, a food processor! I have used it a few times for little things but I have anxiously been awaiting being able to make homemade pesto. Today I finally got to do that! I was so excited, and the best part was that it came out amazing! Go an try it for yourself, it’s easier then it looks.
Ingredients
1/2 cup packed fresh basil leaves
2 Sundried Tomatoes packed in oil
1 clove garlic
2 Tbsp olive oil
1 Tbsp pine nuts
10 oz chicken breast, cut into 1 inch pieces
1 Tbsp olive oil
1 Clove garlic
4 oz Gluten Free Pasta
1. For the pesto sauce, combine the basil, Sundried Tomato, garlic, olive oil, and pine nuts in a food processor. Chop/Grind until everything becomes a sauce consistency. Put to the side.
2. Put pasta in boiling water. Place chicken in a medium skillet cook chicken in olive oil with garlic for 12 minutes over med-high heat.
3. Once pasta is cooked, drain. Put pasta back into saucepan and add pesto and chicken. Mix everything together and enjoy!
Makes 2 servings, each one 400 calories.

what would make it better (in my opinion) would be for the fireplace to be a pizza oven. i don’t think it’d take much for that to be converted… Other than that, I like it! I’d like shelves or cabinets, too. Other than that, beautiful.

FOR BROWNIE CRUST
- 6 Tablespoons Unsalted Butter, melted
- 1-¼ cup Sugar
- 1 Tablespoon Vanilla Extract (I Used Madagascar Bourbon Vanilla)
- 2 whole Eggs
- 1 cup Flour
- 2 Tablespoons Flour
- ⅓ cups Unsweetened Cocoa
- ½ teaspoons Baking Powder
- ½ teaspoons Salt
- 1 cup Semi-Sweet Chocolate Chips
- 1 cup Peanut Butter Chips
- 6 whole Peanut Butter Cups - Cut Into Quarters
FOR CHEESECAKE FILLING
- 2 pounds
Cream Cheese, softened- 5 whole Eggs, Room Temperature
- 1-½ cup Brown Sugar, Firmly Packed
- 1 cup Smooth Peanut Butter
- ½ cups Whipping Cream
- 1 Tablespoon Vanilla Extract (I Used Madagascar Bourbon Vanilla)
FOR DECORATION
- ½ cups
- Whipping Cream
- 1 cup Semi-Sweet Chocolate Chips
- 1 cup Peanut Butter Chips
- 6 Peanut Butter Cups, Cut In Half

I’d hoped to write a post today about how awesome my dinner was last night and how everything went swimmingly and how the boyfriend loves my cooking… That’s what happens when you get cocky in the kitchen- it all goes up in flames. (okay, there weren’t actually any flames- thank God- but still.)
So, we went shopping for supplies for the week on Monday, and got chicken breasts for Tuesday’s dinner, chicken strips for Saturday’s lunch and ground round for last night’s dinner. Well, the round was bad by the time I opened it last night. WHY ME?! So, I got the chicken tenders out instead and marinated them in italian dressing for a quick fix. I then sauteed them in the skillet and they were pretty awesome. After that, I began to mash my potatoes for garlic mash… and they somehow wound up runny? I must not have drained them well enough… Needless to say, I was very disappointed in them… but the flavor was great; I cooked the garlic in there with the potatoes (a suggestion made by melissa2momma aka the kitchen goddess) and it wound up being quite tasty, even if they weren’t perfect. The green beans were fine. I was so flustered about the potatoes at that point that I didn’t really give them proper attention. Anyway, I was less than impressed with my cooking last night, but John didn’t seem to mind, so I was pretty glad.
I just hate feeling inadequate in the kitchen. >____< I know it’s bound to happen every so often (or more often than not, depending on your luck) but still. It’s not my favorite. (._.)
